You might think that there’s nothing special about the combination of Hario V60 and dark-roasted coffee. Well, to be honest, it’s not the combination itself that leads to this article. It is rather the fact that the coffee world is divided on this. Some love dark-roasted filter coffee with all its flavourful facets, others are rather averse to it. The majority of hand filter fans use lightly or medium roasted coffee for this type of preparation. But why?
The term barista comes from the Italian and means “bartender”. It does not matter whether it is a pure espresso bar or a cocktail bar. In English-speaking countries and now also in German-speaking countries, the term “barista” has become established for people who work in a café and prepare the drinks there. In a sense, one is a “coffee sommelier”.
The first espresso patent goes back to Angelo Moriondo and dates from 1884.
For a long time, he was confronted with the fact that it took far too long to brew coffee. In order to brew faster, the coffee had to be ground finer. However, this makes it more difficult for the hot water to penetrate the coffee.

The coffee plant as such has existed for millions of years. Many legends surround the question of how and who first discovered coffee as a drink. It is almost impossible to find out the truth of these stories. It is said that the origin goes back to one or more shepherds in the Ethiopian highlands. In the province of Kaffa, according to many researchers, the birthplace of coffee, the men were on the move with their goats.
Where does coffee originally come from?
Unfortunately, there is no historical evidence of the origin of coffee cultivation. What is known, however, is that the genus “Coffea” originated on the African continent. According to many researchers, the place of origin of coffee, or more precisely Coffea Arabica, is in the Abyssinian region of “Kaffa” in the Ethiopian highlands. But this is not the origin of the name.
Which coffee plants are there? There are over 100 different coffee varieties worldwide. With this amount of varieties its almost incredible that only four of them are taken into account for global coffee production. The familiar Coffea Arabica and Coffea Canephora (Robusta) are the leaders in world production with about 99%. The two exotics Coffea Liberica and Excelsia contribute only 1%.
If you start to take an interest in coffee, you will soon realise that you have actually started a journey. A journey in many respects. First of all, the journey to the perfect coffee. Of course, perfect is very subjective. You work your way through different brewing methods. Then you try out all kinds of recipes. Be it for the espresso machine, the hand filter, the French press or similar.
You hear this question again and again. But what is the reason for this phenomenon and how can you counteract it?
Whether you know where the problem comes from or not, one thing is certain: when you are confronted with this question, the coffee tastes very bitter and the assumption that it is burnt is therefore very obvious. However, there is no actual burning of the coffee during the brewing process. What takes place here is an over-extraction.
